Famous for its sweetness, long-storage, tenderness even when large, and high-quality greens. Also called “Winter Keeper”, this red-fleshed beet can be spring planted, grown all season, then harvested as a very large beet in the fall (up to 3-4 lbs). Store in your root cellar or fridge for use all winter.
Oh the humble beet! As sweet as candy, literally since a lot of U.S. sugar comes from beets, this vegetable will find its way to the table in so many ways – roasted, boiled, raw, pickled, sautéed, pureed in soups, juiced, and dehydrated. Roots will store for 1-4 months without the tops, bringing the dinner table bright nutritious food in the middle of winter. Of course, the greens are delicious too and can be cooked just like spinach or chard. Nutrients: dietary fiber, vitamins A, C, B6, thiamine, riboflavin, folate, niacin, iron, potassium, manganese, magnesium, and phosphorus.

    Being a beet growing novice I was a little shy when it came time to plant these. Thankfully a friend jumped in and planted hundreds of seeds for me. When I asked what i was going to do with all the beets he said “eat them of course”. I like beets ok (lets be honest, they kinda taste like dirt sometimes), but I had no idea what I was in for! These beets, are SO easy to grow (in so, so soil too) lovely rich beet greens declare that life exists underneath that soil and they needed very little tending. The beets themselves were gorgeous in color and nice size, some of them were softball size! For winter storage I roasted them in the late summer, and stuck them in the freezer. I have only pride in serving these beets to my guests, they are like little purple pieces of candy, sweet and tender and don’t taste a thing like dirt!
