Celery is a refreshing, crunchy treat from the garden that clears the palate with a pleasing bitterness. It’s used extensively in salads and soups and is also great when juiced. Celeriac, a variety of celery that is grown for its root and well known in Europe, can be eaten raw in salads, steamed, baked, boiled, pureed or stir-fried. It adds wonderful flavor when cooked and mashed with potatoes. Celeriac may be stored in a cool, dry area of your home for several weeks. A moderately frost hardy biennial that is grown in full sun and planted late spring through early summer. Start your seeds indoors 10-12 weeks before the last frost. Place several seeds per cell as germination is naturally low (50%) for all celery varieties. Light is required for seeds to germinate, so don't plant seeds too deeply into the soil. Celery seedlings will bolt if exposed to temps below 55 F. Plant Seeds: 1/16" deep in pots and transplant into the garden after last frost, 8-14" apart with 2' between rows. Soil Temp: 50-70 F.
