Amaranth
Description: A traditional food and ornamental plant used by many cultures around the world. The leaves are eaten fresh, cooked and used as a natural food dye. Many gardeners plant Amaranth solely for their spectacular flowers. Some varieties of Amaranth seed are used as a gluten-free grain that is high in protein, remains alkaline when cooked and has a delicious nutty flavor. Nutrients: protein, vitamins C and B6, riboflavin, thiamin, folate, pantothenic acid, magnesium, phosphorous, potassium, iron, and calcium.
Guidelines: Easy to grow annual plant with light frost tolerance that is planted in the spring and summer. Amaranth will easily self seed the following year. Plant Seeds: 1/8"deep with 3" between seeds, in rows 18" apart. Soil Temp: 60-85F. Days to Emergence: 8-12. Thin To/Mature Plant Spacing: 6". Seeds/Oz: 25,000. Seed Wt./100' Row: 1/16 oz.
