Burdock root is known for its sweet, mildly pungent flavor. The roots have a high nutritional value and have medicinal properties. The leaf stalks are also edible and cooked like celery. Mature plants reach 3' tall. Direct seed in early spring and harvest roots in summer like carrots.

Direct seed or transplant into the garden in spring. Prefers full sun and well-draining soil but can tolerate a wide range of conditions. Water well to ensure good germination. Once established, burdock is fairly drought tolerant. Typically grown for roots. Annual.

When to Seed Burdock

This annual herb should be direct seeded into the garden in early spring or transplanted once all danger of frost has passed. 

Where to Plant Burdock

This plant will appreciate a spot with full sun. Loose, well-draining soil is ideal but this plant will tolerate a wide range of growing conditions. 

Growing Burdock

Sow seeds one inch deep and three to six inches apart. When established, this herb is extremely low maintenance and drought tolerant.

Harvesting Burdock

Burdock is most often harvested for its edible roots in the summer. Harvest them like you would carrots. If they are sticking in the soil, use a shovel or fork to lift up and loosen the soil around the roots.
