Cichorium intybus

A somewhat woody, perennial herbaceous plant with bright blue flowers, rarely white or pink. Many medicinal uses, but often cultivated for salad leaves. Roots are also roasted as a coffee substitute.

Direct seed or transplant into the garden in early spring or late summer. Prefers full sun and well-draining soil but can tolerate a wide range of conditions. Water well to ensure good germination. Once established, chicory is fairly drought tolerant. Typically grown for roots. Perennial.

This perennial herb should be direct seeded into the garden in early spring or transplanted once all danger of frost has passed. 

Where to Plant Chicory

This plant will appreciate a spot with full sun. Loose, well-draining soil is ideal but this plant will tolerate a wide range of growing conditions. It is perennial and will spread, so keep that in mind when choosing a planting location. 

Growing Chicory

Sow seeds ¼ inch deep and one inch apart. Once mature, thin to ten to 12 inches apart. When established, this herb is low maintenance and drought tolerant. 

Harvesting Chicory

Leaves can be harvested ahead of flowering with sharp shears or the roots can be harvested in the fall once all foliage has died back.
