Ipomoea batatas

Sunshine has tan to light orange skin (depending one how much red clay they’re grown in!) and light orange flesh.  While creamier in texture than your “typical” dark orange sweet potato, it is very sweet with a delicious flavor.  Sunshine is a good multi-purpose sweet potato, great for baking, chopping and roasting, frying, and even pies.   While perhaps not a true bush-type, its vines are more compact than any other variety I’ve grown, making them a little more manageable in smaller spaces.  The leaves are a “cut-leaf” type as opposed to the standard, heart-shaped type.

Slips are locally grown by A Way of Life Farm in Rutherford County, NC.
